As we get deeper into spring we begin to see more and more local produce at the grocery stores, farm stands and farmers’ markets.

Here in New England we can look to add some spring flair to standards such as salads and pastas by tossing in some of the best the May has to offer, including mushrooms, new potatoes, fava beans, arugula and lettuce, and rhubarb. Our registered dietitians chose some simple recipes this month to highlight some of these spring treats:
